The four-course dinner has been carefully curated to pair each course with a Caribbean rum that perfectly complements the dish. The evening will give guests a taste of paradise, and begins with Angostura 1824 from Trinidad, paired with Caribbean Spiced Shrimp; followed by Flor de Cana, 18 Years from Managua, Nicaragua, accompanied by Coconut and Macadamia Nut Crusted Seared Mahi in an orange noisette butter sauce. The third course pairs the Ron Zucapa, XO from Guatemala, with Pork Medallions in a pineapple rum sauce; and finishes with Plantation Isle of Fiji from Fiji, coupled with Vanilla Ice Cream enrobed in a white chocolate and toasted coconut shell with a warm rum-infused mango sauce and toffee almond brittle.
